In a medium mixing bowl, sift together the all purpose flour, rice flour, cocoa powder, baking powder, salt and coffee powder.
In a small mixing bowl, combine the eggs, chocolate milk, butter-milk, vanilla and Greenlite Stevia Extract
Using a fork, work the oil and the butter into dry ingredients.
Add the wet ingredient to the dry ingredients, and stir until just mixed. Do not over stir. Fold the nuts.
Spoon the batter into a lightly oiled mini muffin tin. Fill each cup with a heaping tablespoon of batter and bake for about 12 minutes. When a toothpick inserted into the center of a muffin come our clean, the muffins are done.
