SHRIMP AND NOPAL SOUP


4 - 6 Servings



Ingredients:
  • 10 medium-sized nopal leaves, chopped and cooked
  • 6 "cascabel" peppers
  • 1/2 onion, finely chopped
  • 2 clovers of garlic, chopped
  • 1/2 kg of medium-sized shrimps, no heads
  • 1 1/2 liter of chicken broth or water
  • 1 branch of "epazote"
  • Salt to taste
  • Vegetable oil


Procedure:

1.- Clean the peppers and take out the veins and seeds. Fry them slightly in vegetable oil until they are shinny. Take them out of the oil and set aside.

2.- In the same oil, sauté the onion and garlic, and later add the broth, chopped nopal, shrimps and peppers.

3.- When the mixture begins to boil, add the "epazote", salt to taste, lower the flame and cook until everything is well cooked.
