NOPAL AND CHICKEN SOUP


4 - 6 Servings



Ingredients:
  • 4 large nopal leaves, diced and cooked
  • 1 chicken breast, diced
  • 1/2 onion, chopped
  • 2 clovers of garlic, chopped
  • 2 laurel leaves
  • 4 whole black peppers
  • 3 tomatoes
  • 1 branch of "epazote"
  • 1 "pasilla" pepper, washed and chopped
  • 250 g of "panela" cheese, diced
  • Salt or chicken broth powder to taste
  • vegetable oil


Procedure:

1.- Broil the tomatoes, peel them and take out the seeds. Blend them with 2 cups of water and set aside the mixture.

2.- Heat some oil and fry slightly the onion and garlic until they are transparent.

3.- Add the chicken and when it is slightly brown, add the nopal leaves, laurel, tomato mixture, pepper and salt or broth. Cook until it begins to boil.

4.- Add 1 ¼ liters of water, epazote and "pasilla" pepper and cook until the chicken is well cooked. Serve with cheese.
