4 - 6 Servings



Ingredients:
  • 12 large nopal leaves, cut in stripes
  • 1/2 kg of cooked beef brisket (falda)
  • 1 purple onion, cut in stripes
  • 4 tablespoons of coriander, finely chopped
  • 1 large can of drained corn kernels
  • 2 chopped tomatoes
  • 2 "cuaresmeño" peppers, finely chopped
  • 2 avocados
  • 2 tablespoons of olive oil (optional)
  • 1/4 cup of lime juice (or as much as you want)
  • 1 teaspoon of sodium bicarbonate
  • Salt to taste


Procedure:

1.- Cook the nopal leaves in sufficient water with salt and the bicarbonate. Drain them. Freshen them under a cold water jet. Set aside.

2.- Shred the meat and put it in a bowl. Add the rest of the ingredients, except the avocados, and mix well .- Cover with plastic wrap and put in the refrigerator for 30 minutes before serving.

3.- Chop the avocado and add it to the mixture. Toss slightly and serve with fried tortillas.
