SAILING CHARALES (A TYPE OF LAKE FISH)


4 - 6 Servings



Ingredients:
  • 1/2 kg nopal leaves, diced
  • 1 chopped onion
  • 3 "guajillo" peppers
  • 1 "mulato" pepper
  • 1/2 kg of dried "charales"
  • 1 teaspoon of sodium bicarbonate
  • Salt to taste
  • Vegetable oil


Procedure:

1.- Cook the nopal leaves in sufficient water with bicarbonate and salt. When they are cooked, rinse and drain them. Set them aside.

2.- In a pan with hot oil, fry lightly the peppers and put them in a bowl with ¼ cup of water and let them soak until they are soft.

3.- Then blend the peppers until having a homogeneous mixture, and set it aside.

4.- Fry slightly the onion with a little oil, pour in the sauce and fry it until it boils.

5.- Add the nopal leaves, charales and 1 cup of water and cook for 20 minutes.
