1.- Rinse the nopal leaves. Dry them with paper towels and cover them with flour.
2.- Whip the egg whites until they are hard, add the yolks and stir them in carefully.
3.- Dip the nopal leaves in the egg batter and fry them in plenty of oil until they are brown. Take them out and place them on paper towels to drain the oil excess.
4.- For the sauce: Blend the tomatoes, peppers, garlic and onion with ¼ cup of water.
5.- Fry the mixture in a kettle with oil, add salt to taste and cook the sauce until it changes color.
6.- Put the battered nopal leaves in the sauce, and when they are hot, take them out and serve.
You can also make chopped nopal patties. Use 3 diced nopal leaves and put them in the egg batter. Then put spoonfuls of the batter in a pan with hot oil and fry the patties until they are brown. Add the patties to the green chili sauce.
