NOPAL CAKE WITH ZAPOTE SAUCE.


4 - 6 Servings



Ingredients:
    For the cake:

  • 225 grs of butter
  • 1/2 cup of sugar
  • 4 egg yolks
  • 1 can of condensed milk
  • 4 tablespoons of brandy
  • 1 cup of cooked and ground nopal leaves
  • 1 cup of chopped walnut
  • 1 cup of flour
  • 2 teaspoons of baking powder

    For the zapote sauce:

  • 1/2 kg of zapote (Mexican fruit)
  • 1 tequila glass of orange liqueur
  • 1/2 cup of orange juice
  • 2 tablespoons of powdered sugar for decorating


Procedure:

Cake:

1.- Soften the butter and add the sugar and the yolks one by one.

2.- Add the milk, brandy, nopal purée, walnuts and the previously sifted flour with the baking powder.

3.- Mix until all the ingredients are perfectly well mixed

4.- Pour the mixture in a previously greased ring-shaped mold.

5.- Bake at 180° C for 40 minutes or until a tooth pick is inserted in the batter and it comes out clean.

6.- Take out the cake from the mold, decorate to your taste and serve with the zapote sauce.

Zapote sauce:

1.- Blend all the ingredients.
