CHARACTERISTICS OF MAGUEY
There are two types of honey water maguey
- Criollo:Grows in any region outside of the Apan region
- Domestic:The region, ground and soil type maintains its properties and composition,
provides the best honey water and therefore, the best honey.
EXTRACTION OF HONEY WATER
1.- cut away and cut out the bulb or meyolote.

2.- remove the metzal
|
3.-leave the meyolote to drip
|
4.- fills in 24 hours
|
5. extract with acocote
|
6. scrape and extract the meyolote daily
|
Production:under strict health standards.
dehydratation at high vacuum with low tº in order to preserve 95% of its properties.
